Born in Jeandelize, near Conflans-Jarny, in Meurthe-et-Moselle, France, Canon Georges Thiébaux came from a farming family and had two sisters and a brother. Following his studies at the Grand Séminaire of Pont-à-Mousson and of Nancy, he was ordained to the priesthood in 1904, and served as a teacher and vicar at Pont-à-Mousson before being named curate of Morey in 1910, where he stayed until 1921.

A stretcher bearer on the front, mainly in Italy during the Great War, he was successively decorated with the Croix de Guerre. In 1921, Canon Georges moved to Longwy-Haut and had the ruined church rebuilt. His restoration works across the village led to the latter's population increase from that of 1000 inhabitants in 1922 to that of 7,000 in 1950.

Named almoner of the Briey Civil Hospital in 1952, Thiébaux passed away in this city on May 7, 1961, aged 81. His body was sent to Longwy-Haut where he was laid to rest along with one of his sisters in the local cemetery.
