From the book The Family of James Thornton by Charles Thornton Adams it states:
The only record that has been found of the wife of James Thornton is the deed of the Worcester farm, dated February 14, 1739-40, in which " Ketiran " Thornton joins...

Therefore, Is Elizabeth Jenkins correct? Or is it Katherine or Elizabeth Katherine?

Although most family trees state that Elizabeth Jenkins was the wife of James Thornton, there is absolutely no evidence that I have found, and I have searched extensively, that he had a wife by that name. As you state, there is a deed with the name Ketiran. That deed, dated 1739, is on FamilySearch and actually lists her name three times as Kathorn then Ketiran twice.
In addition, there is a baptism record for two of their daughters that say the parents and James and Katharine. Finally, there is a deed dated 1749 for the sale of a lot in Pelham, NH that lists his wife Cattrin. If you would like me to send you those sources, I can do that.
Thus, James had a wife named Katherine from at least 1725 until 1749. I believe Cattrin, Katerin, etc are all versions of Katherine. Therefore, James could not have had a wife named Elizabeth that died in 1741 as you have indicated on the memorial. In addition, there is no evidence that either person, Elizabeth or Katherine is buried in Forest Hill Cemetery. I have contacted the genealogist/historian of the Derry Public Library and they have looked in all of their sources and have not found any interment for an Elizabeth or Katherine in James' plot.
I believe the entry here only confuses the matter and incorrectly gives validation to something that not only is unproven but the evidence, in fact, strongly suggests is incorrect. If you must leave up a listing for a wife that discusses the controversy, I would suggest that you remove the cemetery listing and use the "not buried in a cemetery" option and then choose "burial details unknown". I would also suggest that you give heavier weight to Katherine as his wife, rather than Elizabeth.

I have done further research by contacting the Public Library in Derry, NH. They have checked four different sources of old records including cemetery records and church records and there is no record at all of Elizabeth Jenkins Thornton being buried at this cemetery. They do have James Thornton and his daughter but no Elizabeth.
