Ephraim was the second son born to Menno and Catherine (Fisher) Eby in Ontario, Canada. The Eby family moved to Jackson Co., Minnesota around 1855.


Ephraim and Josephine "Phenie" Norman were married in Jackson, MN on November 26, 1871. They were blessed with five children: Nettie Mae (Eby) Sowles; Edith Eby [1877-1960]; Florence "Flossie" (Eby) Griffin; Grace Rose (Eby) McKenney; and Harrison Norman "Harry" Eby.
