Businessman. He was an Italian-born American restaurateur, chef and hotel owner along with being credited for the ever-famous Caesar Salad. Born Caesarea Cardini in the region of Lago Maggiore, Italy, he had one sister and three brothers. Arriving on May 1, 1913, he immigrated to the United States with his brothers, Alessandro, Carlotta and Caudencio, yet left his sister Mario in Italy. He worked in the restaurant business before becoming an owner. With his brother Alessandro as his partner, he ran restaurants in San Diego, California and Tijuana, Mexico at the same time. This was during the Prohibition era of no alcohol being served in the United States but could be served in Mexico and catering to Americans. His restaurant business spanned from Tijuana to Sacramento to San Diego and on to Hollywood. After arriving in Los Angeles in 1938, he became the owner and operated of Caesar Cardini, Incorporated and the Hotel Caesar's in Hollywood. On July 4, 1924 at his Tijuana restaurant, the "Caesar salad" was created by Caesar, becoming his trademarked by 1948 and being introduced to his future restaurants. The salad was a blend of Romain lettuce, Parmesan cheese, croutons, and a highly-seasoned dressing. In the salad's original presentation, this salad was skillfully prepared and gracefully served at the tableside. Nearly a hundred years later, there are more than a dozen varieties of the original recipe. The "Caesar salad" became well-known on menus throughout the United States and in Europe in the 1990's. After his death from a sudden stroke, his only child, Rosa, managed the business Caesar Cardini, Incorporated until it was sold. In the 21st century, the salad dressing is being sold using his name as the brand.
