George was a son of Matthias and Nancy Elmore from Newberry County, South Carolina. He moved to Lafayette County, Mississippi with his parents sometime about 1846. He served in the cavalry during the Civil War. Part of his service was under the direction of General Nathan Bedford Forrest. He took part in the raid on General Grant's headquarters at Holly Springs, Mississippi. He was captured while he was on a one-man scouting expedition in North Mississippi and was imprisoned at Memphis, Tennessee. He was released at the end of the War.

George married twice, the first time in 1874 to Mary Jane Huston with whom he had three children: Jessie, Thomas Alexander, and George Carlton Elmore. After Mary Jane's death, he remarried Malinda Stricklin in 1894. They had five children together, but only two lived to become adults: Christopher Matthias and John Weslie Elmore.
