Stolz was a student of Simon Sechter and founded a Musical Education Institute in 1857 ''Musikschule Öffentliches Musik- Bildungsinstitut '' Mehlplatz 1,Graz.
The Institute was continued by his daughters, Pauline (1873-1935) and Susan (1874-1933) after his death. Stolz's heritage were his own invented music theories and about 130 compositions.
He was married to Ida Carolina Bondy, who was a pianist.They had 13 children, among them: Leopold Jacob Stolz ( 1866-1957) austrian composer and conductor, royal bandmaster and Robert Elisabeth Stolz (1880-1975) austrian composer and conductor and Mary Ida Lesky (1870-1959) mother of Dr. h.c. rer. pol. Albin Lesky, Maximilian Stolz (1868-1945) austrian actor and Elisabeth Giurco (b. 1872).
In rememberance of Jakob Stolz there is a plaque near the Starcke-Häuschen and the Turkish well on the Schlossberg in Graz.
