She graduated from Ft. Madison High School IA in 1947 as the salutatorian. In 1951 Ernestine graduated from the University of Iowa with a BA in home economics and was a member of Chi Omega sorority. She went on to study at the University of Michigan. She had a career as a dietician at several Chicago hospitals and later taught culinary skills at the Ft. Madison Iowa State Penitentiary where she retired.
In 1956 she married the love of her life Dwight Francis Delaney. Together they had 6 beautiful children whom Ernestine raised on her own after Dwight lost his battle with cancer at the young age of 40. She stayed in the Chicago area for some time after his death and then moved back to Ft. Madison Iowa to be closer to her parents and sister. After her retirement she moved back to the Chicago area to be near her children.
She enjoyed cooking, dancing, music and being with her family. She was proud of her Lebanese heritage and loved the annual Rashid family reunions. Ernestine was witty, smart and had a genuine caring demeanor where she always looked out for others—even in her last few years she helped other residents in the nursing home and made sure they were taken care of.
Ernestine will be greatly missed by her children Nanette Delaney of Naperville IL, Dwight Delaney of Downers Grove IL, Sue Clanton of Westmont IL, Jennifer (Rick) Rigley of Burr Ridge IL and Dawn (Rob) Conrad of Bristol WI, 10 grandchildren, great grandson, nieces and nephews. She was preceded in death by her husband, daughter (Janice Delaney Alcaraz), parents, step mom and sister (Delores Pollpeter).
A visitation will be held on December 8th from 10 am - 12 pm followed by a memorial service at 12 PM at Adolf Funeral Home & Crematory in Willowbrook IL. A private family burial will be in Assumption Catholic Cemetery Glenwood IL on Monday, December 10, 2018.
