1953-2007

Susan Carol (Webb) Knapp, 54, of Broken Arrow, Oklahoma, died Monday, January 8, 2007, at Hillcrest Hospital in Tulsa, Oklahoma, after a brief and courageous battle with cancer. Funeral services were held January 11, at the Northside Christian Church in Broken Arrow, followed by interment at Floral Haven Memorial Gardens of Broken Arrow.
Susan was a beloved wife, mother, grandmother, daughter, sister, and friend. Her passions included her family, church, patients, bicycling, sewing, cooking, and writing. She was born in Albuquerque, New Mexico, on January 1, 1953, to Donald and Betty Webb (currently of Santa Maria, California). After graduating from Orcutt Junior High School in 1966 and Ernest Righetti High School in 1970, she was awarded her Associate of Arts degree from Allen Hancock College in 1972. She married Kenneth Knapp on April 3, 1971, and continued her education at Cal Poly San Luis Obispo. Susan and Ken moved to Missouri in 1973, and she obtained a Bachelor of Science Degree in Dietetics from Central Missouri University in 1974 and a Master's Degree in Dietetics and Nutrition from the University of Kansas Medical Center in 1975.
Known for her quiet enthusiasm, positive nature, and conscientious manner, Susan spread joy and hope wherever she went. Her engaging smile and effortless laughter will be dearly missed and fondly remembered. Susan was the first board certified renal dietician specialist (CSR) in the state of Oklahoma. She was employed for seven years as a renal dietician (RD) for DaVita Dialysis Company. Susan was an active member of Northside Christian Church in Broken Arrow and an officer of the Tulsa Bicycle Club. Her professional affiliations included the National Kidney Foundation, where she was an officer with the Council on Renal Nutrition. She served on the Medical Review Board of End-Stage-Renal-Disease Network 13, and was a member of the Oklahoma Council on Renal Nutrition, the American Dietetic Association, the Renal Practice Group, Diabetes Practice Group, the Oklahoma Dietetic Association and the Tulsa District Dietetic Association.

Susan is survived by her husband of over thirty-five years. She is also survived by her son and daughter-in-law, and by her daughter. Other survivors include two brothers; two sisters; three grandchildren and numerous nieces and nephews.
