On October 15, 1864, he married Sarah Ellen Clark in Houston County, Minn. They had 11 children: Hiram, Frank, Edward, Gus, Finette ("Nettie"), Henrietta ("Etta"), Mark, Vernon, Elsworth, Elmer, and Louie.

George made his living as a blacksmith. Following is his obituary from the Martin County Sentinel:

GEORGE ADAMS — Died, on the morning of the 8th inst of chronic heart trouble, Mr. Geo. Adams of this city aged 55 years, though for a long time ailing Mr. Adams was not considered in any danger until quite recently and the end came unexpectedly and as a shock to everybody. Mr. Adams was one of the oldest settlers, though for several years he lived in Jackson returning here last year and resuming his old trade of blacksmithing, in which business he excelled all others. Deceased leaves a wife and eight children, nearly all fully grown up and hosts of friends who sympathize deeply with the bereaved family. Funeral on Thursday from M.E. church. (Martin County Sentinel newspaper, Fairmont, Martin Co., MN; Friday, July 11, 1902; P10, C4)
