Paul Bybee Larsen, age 92, also known as "Prof.", quietly passed away at his home in Hyde Park, Utah on Saturday afternoon, March 15,2008.
Paul was born September 19, 1915 in Lewiston, Utah. He worked hard on the family farm. This work ethic was with him his entire life. He graduated from North Cache High School and later from Utah State Agricultural College (now Utah State University) in 1938 with a degree in Dairy Food Manufacturing. He was a boxer and broke his nose while boxing in college.
Paul married Venice Clarissa Olson in the Salt Lake Temple on September 6, 1938 and they began their big adventure in life by riding the bus and honeymooning on the way until they reached Lansing, Michigan. Here they both attended Michigan State University and Paul earned his Master's Degree. Paul and Venice lived in New Jersey where he attended Rutgers University; in Texas and in Pocatello, Idaho where he worked for Kraft Foods. World War II was raging at the time and Paul was deferred from active service by the draft board because his work as a chemist in the food industry was considered very important to National Security. They later went to Maryland where he attended the University of Maryland. A call from Professor Morris at Utah State University brought them back to Cache Valley. Paul managed the Dairy Products Plant and taught Dairy Manufacturing. He will be remembered for his excellent dairy products judging teams that he coached. Paul also attended Oregon State University on sabbatical in 1960-1962 working on his doctorate in Food Science.
Paul was an active member of The Church of Jesus Christ of Latter-day Saints, serving as the first Bishop of the Hyde Park Second Ward. He served in many callings including ward clerk, a bishop's counselor, auditor, welfare farm accountant, and as an officiator at the Logan Temple.
His most-loved work was in the garden where he was the Master Gardener. He raised prize-winning Iris, Gladiolas, and many kinds of vegetables. He found great joy in developing new varieties of Iris by cross-pollinating his favorites. Venice and Paul shared the garden's flower and vegetable harvest with everyone.
Paul was an active republican and worked as a delegate for several years. He also served on the Hyde Park Town board and as secretary of the cemetery district. Paul loved to learn and particularly liked national and church history. As his vision worsened, he continued learning with books on tape.
We express our appreciation to our wonderful neighbors. We especially thank Steve, Scott, Courtney, Mark, and others at Access Home Care and Hospice. They went the extra mile to help Paul and the family during his most difficult times.
Paul is preceded in death by his beautiful wife, Venice, who died February 12, 2005, and his grandson Eric who died March 6, 1988, his parents, and his brothers and sisters, Blanche Larsen, Ruth Bybee Larsen Jenkins, Richard Bybee Larsen, and Forrest Bybee Larsen. He is survived by his children, Nancy Jean Larsen, Hyde Park; Carol Lee and Frank (Buddy) Harris, Hyde Park; Jerry LeGrand and Laurel Larsen, Jackson, Michigan. He is survived by his grandchildren, Lowell and Natalie Harris, Kyle and Bonnie Harris, Clarissa and Mike Pofelski, Brita and Nathan Croft, Peter and Kimberly Harris, Ingrid and Tom Davis, Tamara and Joshua Little, Teresa and Scott Hair, Jolyn and Andrew Schleiffarth, Julia and Michael Reynolds and nine great-grandchildren (Jackson, Ethan, Enya, Addie Belle, Jonah, Olivia, Charles, Madeleine, Annaleise) with two more expected this summer.
The family asks that in lieu of flowers or other gifts, donations be given to the LDS Perpetual Education Fund.
Funeral services will be held at 11:00 AM on Saturday, March 22, 2008 in the Hyde Park Stake Center, 535 East 200 South in Hyde Park. A viewing will be held on Friday evening from 6:00 to 8:00 PM at the Allen Mortuary of North Logan, 420 East 1800 North in North Logan, and prior to services on Saturday from 9:30 to 10:30 AM.
