The article about her wedding refers to her as Miss Juliet Opie Hopkins so it appears she did use the Hopkins rather than the Butcher surname.

I see that you have Juliet Opie Hopkins Ayres, 49003501 in Arlington. You also have her adoptive mother, Juliet Opie Hopkins. If you would like to link to the adoptive father, he was Arthur Francis Hopkins, 8032758, buried in Magnolia Cemetery, Mobile, AL. He was my great-grandfather.
Juliet Opie married Arthur Hopkins, the second marriage for both. While Arthur had several children, Juliet had none. As I have found in my genealogy research, occasionally a family member (usually sister to sister) would give a child to a barren couple. Virginia Opie Butcher was the mother of Juliet Opie Butcher, her youngest child. She was apparently given to Juliet and Arthur, who legally adopted her. (In a couple of other examples I found, the child was not adopted but was raised by the sibling.)
