Enok B. Knudson was born 6 June 1869 in Veblungsnes, More og Romsdal, Norway. He was the son of Knud Knudson and Edwardina Storm Bull. He immigrated to the U.S. in 1892, living in Hillsboro, N.D. where he was employed as a cook, the trade he learned in Norway. On June 6 1899 he married Josephine Emilie Hanson and they moved to Finley N.D. where he operated a restaurant. When his cafe burned in 1913 he moved to a farm west of Finley and farmed until 1918. He then moved back to Finley and took over the cafe he operated until his death 1 April, 1946.
Enok and Josephine had 5 sons, Conrad, Evelyn, Harvey, Marvin, Joseph.
