"Buddy" as he was so affectionately called, was the last of 11 children born to Manuel Castro Estrada and Louisa Maria Forquero. Unfortunately Manuel Sr died 6 months before his namesake son was born. Because of Manuel Sr's death his widow began selling her delicious food to support her large family...and that's how the famous Estrada Spanish Kitchens got their start.
