Born Jan. 30, 1920, in Hancock County, Ill., she was the daughter of James Franklin and Minnie Laura Courtois Symmonds. On Oct. 1, 1939, she married Jack Adrian Pancake in Keokuk. He died in 1972.
Mrs. Pancake and her husband owned and operated Pancake Shoe Store in Carthage. She worked as a switchboard operator for the Mississippi Valley Telephone Co. in Nauvoo until her marriage. She graduated from Nauvoo High school.
She was a member of the United Methodist Church in Nauvoo.
Survivors include one daughter, Lynda Peffley of Hicksville, Ohio; one brother, Edward Symmonds of Dallas City, Ill.; and many nieces and nephews.
Besides her husband, she was preceded in death by her parents, one son, five brothers and two sisters.
