History - Eli had already been to Utah and helped his brothers Alfred and Francis establish the first settlement in Tooele. In 1851 he returned to Winter Quarters to bring his wife and surviving son to Utah. She was known in Tooele as Aunt Caroline and helped her husband, Eli, in his duties as Sunday School president and as an undertaker until at least 1880.

Eli and Caroline were joined in their pioneer journey by Elizabeth Caroline's younger sister, Julia Marie Munjar [1832–1851] and Jesse Brockway Barber [1823–1889], who were married in about 1850.

Caroline and Eli's "foster daughter" Julie Ann Barber was the first and only child of Caroline's sister, As they journeyed west across the plains, Julia had a difficult time in giving birth to her first and only child. When it became apparent that she would not survive the ordeal, she gave her tiny newborn daughter to her sister Caroline, begging her to care for her baby and help her husband; Julia died 11 days later, and Julia was raised as Eli and Caroline's daughter and sister to Eli Munjar Lee, their only surviving son.

Caroline died in Provo, Utah County, Utah, where she was a resident of the State Mental Hospital for the last six months of her life.
