Creamed, floured and/or chalked up markers -- if it doesn't belong to you or your family, please do not not touch -- you have no right to, and it gives this site and all members a bad name. Rubbing in any manner an old fragile marker even if over tracing paper or foil can cause crumbling and make the marker unreadable for future visitors and cause erosion far more advanced than nature would have over time. Stone is porous, even if chalk, flour, shaving cream etc are rinsed off it has already penetrated and bonded and effects over time can be irreparable. A good site to learn about this is The Association For Gravestone Studies (under the FAQ) This is true even for newer markers. There is a forum for advice and help on find-a-grave for getting good photos with no violation.I believe this is done out of ignorance, enthusiasm, and eagerness to get a good legible photo and as many as possible at a time to be able to read from the photo for entering later. Best to slow down, take the best photo possible and use a notebook to record what can be seen in person up close, enter such in the caption or on the memorial then upload as is. There are free photo editing/enhancing programs that are amazing in their effectiveness, like the free program Picasa. Go back another time and do more -- they aren't going anywhere real soon :)
