Born Jean Adam Baehr, he was the son of Marie Salomé (née Mager) and Jean Adam Baehr. The parents were married on 1 May 1816. The father's occupation was a tailor.

Jean Adam was born in the village of Keescastel, Bas-Rhin, France. His birth registration is located among French parish and civil registration records. (See copy in photo section) Keescastel (now Keskastel) is located near the border with Germany. Although incorrect, many US records state that Adam was born in Germany. It appears that he considered his nativity to be Germany.

Jean Adam's parents and seven of their children sailed from Le Havre, France aboard the brig "Caroline". They arrived at the Port of Philadelphia on 5 September 1831. Their documents indicate that they considered their nativity to be Germany. The family surname is spelled Baehr on the ship's passenger manifest, but Jean Adam is simply listed as "Adam Baehr" without the "Jean". At some point, Adam omitted the "h" in his last name and chose the spelling of Baer. Adam's brother Louis and sisters Catharine and Caroline also adopted Baer for their surnames.

Adam was first married to Catherine Bowman on 5 June 1851. They had one child, Franklin Delmar Baer. After Catherine's death in 1878, Adam married Rebecca Hummel on 13 May 1882.
