In 1963, an exhibition dedicated to Carpaccio brought together many of his works in Venice in the prestigious setting of the Doge's Palace. It was on this occasion that the painter's name was given to a dish, carpaccio, composed of very thin slices of raw beef fillet served with seasoning. The name comes from the predominance of bright red tones in Vittore Carpaccio's painting.
