I find records both ways, as well. I think I lean toward the "s" version, primarily because he and his 2 brothers were each named for a member of the First Presidency--Brigham Young, Heber Kimball, and Willard Richards.
Did you see the 1850s daguerreotype photo of Hiram W. Mikesell that surfaced in the past few years? I added it to Hiram's FamilySearch page. I answered a phone call at work one day several years ago, and the lady on the other end asked if we wanted some old family records of the Mikesells. I nearly dropped the phone in surprise. Turns out they were Hiram's papers. I just requested them to be digitized and added to the Church History Library's catalog. That will probably take about 6 weeks. The call number is MS 25782. You can access the catalog at: churchhistorycatalog.lds.org The catalog also lists (and shows the digitized version) of several letters that Mikesells wrote to Brigham Young. You can download them from the catalog.

You can transfer John Russell Layton, died in 2005, to me. I'm his daughter in law.

Most of the early records I've seen for Willard give his middle name as Richards (with an "s"). He and his two next oldest brothers seem to have been named for the LDS First Presidency at the time--Brigham Young, Heber C. Kimball, and Willard Richards. The death certificate also gives that spelling. I descend from his older sister Cyntha/Cynthia Ann Mikesell Green Walker. I think the parents must have chosen her name from the birthplace of her father (Garett Walls Mikesell) which was Cynthiana, Kentucky. Not sure what Willard's family records show regarding the spelling of his middle name?
