The daughter of Leonhardt Hoffmann and Maria Ann Schneider Hoffmann, Apollonia ("Loney") Hoffmann Simon was born November 4, 1875 in Wilder, Campbell County, Kentucky, one of eight children. She married Henry George Simon on August 08, 1893 in Campbell County, and they had eight children: Anna Christine Simon Stauber, Mary A. Simon Duvelius, Henry Simon, Bernard L. Simon, Elizabeth Ann Simon Wagner, Catherine Simon Bill, Bernadine Simon Deavy, and Dorothy Simon Pieper. She died on August 31, 1943 in Campbell County at age 67. Her granddaughter Mary Stauber Donnelly remembered having school-day lunches--especially tomato soup--with her at her home in Newport, Campbell County.

Apollonia was the second of four generations of mothers and daughters buried at St. Joseph Cemetery in Wilder. Her heritage was German.
