Eunice Bybee Simonson, 95, of Burley, passed away Thursday, Dec. 19, 2013, at Safe Haven Care of Burley.

Eunice was born Feb. 28, 1918, in Grace, Idaho, in the home of her grandparents. She was the second youngest of six children.

She spent her entire life living in Idaho but enjoyed her vacations that she took with her sisters. They visited several places including Hawaii and Alaska. She also enjoyed spending time at her sister's cabin in Wyoming.

She was an active member of the LDS Church and enjoyed her relationships and friendships that she had through her membership.

She worked for more than 30 years as a cook at Connor's Cafe after learning how to cook at a small cafe in Lava Hot Springs.

Her most cherished memories were of welcoming the arrival of her 13 grandchildren, 32 great-grandchildren, and 44 great-great-grandchildren.

Eunice was preceded in death by her parents, all of her brothers and sisters and all three of her children. Two great-grandchildren also preceded her.

The funeral will be held at 2 p.m. Monday, Dec. 23, at the Burley LDS 3rd Ward Chapel, 2200 Oakley Ave. in Burley. Viewing for family and friends will be held for one hour prior to the service Monday at the church.

Services will conclude with burial in the Paul Cemetery under the direction of Joel Heward Hansen Mortuary.

The family would like to thank the staff at Safe haven in Burley for the care and love that they have shown our grandmother over the last couple of years. You loved her as much as we did.
