ALLEN, Carol Theresa (nee Vitale), 68, of Apopka, Florida, fortified with the sacraments of Holy Mother Church, passed away peacefully on Saturday, May 14, 2016. Carol is the beloved daughter of the late Joseph and Frances (nee Granda) Vitale. She is the beloved mother of the late Joseph Matthew Allen and Stephanie Carol Capparelli. She is the loving mother-in-law of Gregory John Najbart, Jr. She is also the dear Nonna of Genevieve Grace Najbart and soon to be grandson, Gregory John Najbart, III.

Carol was born in New York where she met her late husband, Stephen F. Allen (later divorced) and had two children. In 1989 she moved to Florida with her children. She was a New York resident for forty- two years.

Carol was living in Saint Louis at the time of her passing. She was only a resident of Saint Louis for seven months. Prior to becoming ill, she had planned the move in order to be close to her daughter and family. Carol considered Florida her home and was a resident of Florida since 1989. In 2009, Carol moved to Orlando from South Florida.

Carol entered Nursing school straight from high school. She went back to college and earned a Bachelor degree in Psychology in 1985 while being a full time, single mother. Carol was a devoted mother. As a nurse, Carol loved working in Obstetrics and maternity. She later became a school nurse and finally ended her career in home health. She had a passion for nursing and was exceptional at it.

Carol was one of a kind. She was beautiful, generous, compassionate, loving, kind, intelligent and loved so much by friends and family. She will be missed eternally.

A memorial gathering will be held in honor of Carol from 4-7 p.m. on Friday, June 3, 2016 at the Baldwin Fairchild Funeral Home, 994 E. Altamonte Dr., Altamonte, FL 32701. There will be a prayer service at 5:00 p.m. at the funeral home. In memory of Carol, contributions may be made to the family.
