Joe was the son of James Joseph "Jim" Hester and Eliza Jane Henry. His brothers and sisters were Reece, Mary, Tilden, Jenny, Julia, Lou Ettie and Grace.

He was the husband of Sarah Amelia Cocke. He was the father of Ruth (Hester) Murdock and James Joseph "Joe" or "Buddy" Hester.

He was a Marine Corps veteran of World War I, stationed in France as an MP, and a lifelong nursery-man. He was known for his camellias and his crepe myrtles. He was the owner of Hester Nursery in Seabrook and the Hester Jungle Nursery in Mauriceville, Texas. His nursery in Shepherd, Texas, was a wholesale source for other nurseries.

This Joe Hester is listed on his stone as James J. Sr., but he and his father were both named James Joseph Hester, as was Joe and Sarah's son, James Joseph Hester III. The eldest of the three went by Jim Hester and the youngest of the three went by Joe Jr. or Buddy, leaving this Joe to be known as Joe Sr. in his later years.
