She was a Grant on her marriage certificate to Dan Blankenship and her oldest child, Hattie, was also a Grant prior to her own marriage, and family story states that Hattie was born out-of-wedlock prior to Emeline marrying Dan. So, Emeline herself was also likely born out-of-wedlock, thus having her mother's maiden name of Grant. And after Dan's death, Emeline later married Columbus "Lum" Grant, thus gaining the surname of Grant once again.
