Mr. Baur came to Springfield in 1956 to become executive chef of the St. Nicholas Hotel. In the early 1970s, Baur left to become general manager of the newly built Forum 30 Hotel, now the Springfield Hilton. He opened his own restaurant, Baur's Restaurant, in 1976. Because of his love of fine wines, Baur had an extensive collection in his restaurant, winning many awards for its wine selections.
In 1981, Baur converted an adjacent laundry into Baur's Opera House, the city's most polished disco and bar. Those two establishments in turn provided an anchor for Vinegar Hill Mall, which opened in 1982.
Baur also made time to help with St. John's Breadline, civic projects and teaching at would-be chefs at the Capital Area Vocational Center.
George W. Baur, 62, of Springfield died at 9:24 a.m. Tuesday in Springfield.
He was born April 8, 1931, in Ravensburg, Germany, the son of George W. and Paula Weishaupt Baur. He married Viola G. Vespa in 1957. Preceding him in death was a sister, Rita Beutelschiess.
Mr. Baur had been the owner and operator of Baur's Restaurant since 1976. He was a member of Eagles Aerie 437, Illini Country Club, Sangamo Club, Illinois Restaurant Association and Bailli Honorary of La Chaine des Rotisseurs.
Surviving are his wife, Viola G. of Springfield; a daughter, Mrs. Dennis (Kim) Larson of Springfield; a son, Gregory George Baur of Chicago; three grandchildren; a sister, Mrs. Erwin (Charlotte) Straub of Bad Boll, Germany; several aunts, uncles, nieces, nephews and cousins.
Services: Staab Funeral Home, with the Rev. Peter Mascari officiating. Burial: Calvary Cemetery.
