Gilbert married much younger Elva Roanna Gary, 16 May 1897 in East Columbia, Texas. Their children were Lucy, Mattie, Mary, Hiram, John, and Julia Bice. Gilbert Bice died, 21 June 1951, aged 92, in Beaumont, Texas, and was buried at Magnolia Cemetery.
