LeRoy McCoy was born on 25 February 1876 in Monroe County, Iowa. He was adopted at a young age by James M. Pollock (1835-1909) and Elizabeth "Lizzie" Pollock (1836-unknown), and raised in Tingley, Ringgold County, Iowa.

He was married to Stella May McClure (1875-1958) about 1902. They resided in Colorado, Wyoming, Arizona and California. They had five sons: Charles Pollock (1902-1988), Marvin Jay Pollock (1904-1986), Frank Leslie Pollock (1907-1994), Sanford L. Pollock (later renamed McCoy) (1909-1963), and their youngest son, who achieved international recognition as a painter, Paul Jackson Pollock (1912-1956).

LeRoy worked as a rancher and farmer, and later in road construction. He died on 5 March 1933 in Los Angeles, CA at the age of 57. He was interred at Grand View Memorial Park.
