Simon was the eldest of nine children born to Elisha Belcher and Eunice (Hull) Brewster. The Brewsters were direct descendants of William Brewster of the Mayflower. Simon was named for his paternal grandfather and greatgrandfather. Simon's middle name was for his maternal grandfather Latham Hull. Simon worked in Griswold for about ten years before coming to Rochester, New York around 1841.
On October 14, 1844 he wed Miss Editha Chloe Colvin in Rochester. At about the same time he had a grocery store at 16 South St. Paul Street, Rochester with his brother John Hull Brewster.

Between 1845 and 1849, the couple's three children were born. They resided in various homes, 3 Howell Street from 1847 to at least 1855. By 1859 they settled on South Clinton Avenue and stayed there permanently.

Simon and John proved to be very successful grocers, they had a second store by 1851 at 72 Main Street and their brothers Henry and Horace joined in the business initially as clerks. For a currently unknown reason, Simon stepped back from the grocery business in 1859 at the age of 48 and went into a temporary retirement. Bigger things were ahead for him.

In 1852 the Traders Bank had been organized and Simon joined them as was Vice-President in 1863, then President from 1866 until his death. He brought his eldest child, Henry Colvin Brewster into the bank, initially as a cashier. When Simon passed away from heart problems, son Henry became the bank's president.
