She was born on May 31, 1930, in Keokuk, Iowa. Her parents were Lily Florilla (Davis) Stark and John Stark. She spent much of her childhood in Kentucky with her grandmother, Bertha Bell (Baird) Davis, and family before returning to Keokuk, where she attended Keokuk High School.
On Feb. 4, 1949, she was united in marriage to Bill Knight of Carthage. He survives at home.
Also surviving are two sons, Bill (Terry) Knight Jr. of Elmwood and Tracy (Sharon) Knight of Macomb; and one grandson, Russell Baker of St. Louis.
She was preceded in death by her parents, grandparents and brother, John "Buster" Stark.
Betty was a homemaker and also worked part time for years at Jo's Swap Shop in Carthage.
Active in her church, the Elvaston Presbyterian Church, she also volunteered with Cub Scouts and served as a Gray Lady at Memorial Hospital in Carthage.
Betty most enjoyed her family, their many pets over the years, plus gardening, cooking, dancing, playing bridge and golf.
Funeral services will be held at 2 p.m. today, June 30, 2011, at Printy Funeral Home in Carthage, with Pastor Ron Leonard officiating. Burial will follow in Moss Ridge Cemetery in Carthage. Visitation was held Wednesday at Printy Funeral Home in Carthage.
Memorials may be directed to the Elvaston Presbyterian Church in Elvaston.
