Inez was born on the family farm in Reading, Minnesota on July 13, 1930. She attended country school in Reading until moving to live with her sister Loretta in Tracy for her Junior and Senior years in High School. She graduated from Tracy High School in 1948 and then moved to Sleepy Eye and started working in the office for Pietrus. She met her husband, Armin Coulter, on a double-date with her sister and husband, Esther and Ken Benedict. On February 13, 1950, Inez married Armin at St. Joseph's Catholic Church in Lamberton. They moved to the family farm 4 miles north of Lamberton where they farmed and raised their family.
In 2000, they sold their farmsite and moved to town due to Armin's health issues. Armin passed away on November 2nd, 2000 and Inez continued to live in the house untl November 2008. She then moved to Valley View Manor Healthcare Center where she resided until February 20th, 2012. Inez was very active in the community as a member of the American Legion Auxiliary, Redwood County Extension, St. Joseph's Catholic Church, helping with her sister Esther's" Countryside Cooks" catering business and other various community efforts throughout the years.
Her hobbies included gardening, baking, cooking, and sewing. She loved her family very much. She also loved to visit with friends and neighbors, belonging to a neighborhood weigh-in coffee group and card clubs.

Inez will be missed by her children Sue (Jim) Imker of Lamberton MN, Brad (Paula) Coulter of Prior Lake MN; grandchildren Joe Imker of Esterville IA, Wade Imker of Lamberton MN, Brianna Coulter of Lilydale MN, and Brandi Coulter of Lilydale MN; brothers Jack (Judy) Henning, Bill Henning; sisters Leona Ausham, Cleo Taylor, Wilda (Jim) Myers, sister-in-law Alice Henning, and many nieces, nephews, and friends.

Preceding her in death were her parents John and Ida (Schoo) Henning; husband Armin; brothers Quienes, Arnold, Donald; sisters Loretta, Dorothy, Viola, Gerry, and Esther.
