Joseph was the son of Mehitable Root and Peter Eastman.

Joseph's parents moved to New Fairfield CT when he was 14. He married Phebe Hendricks on 12 Oct 1746 in New Fairfield. They were married by the justice of the peace, Ephraim Hubbell, of North Society of New Fairfield which is now Sherman CT.

Their children were Hezekiah, Nathaniel, John, Joseph, Phebe, Peter, Experience, and Abraham Dayton.

Joseph was a Revolutionary War soldier in CT's 16th Regiment, under Col. Beardsley.

In 1788 Joseph was a resident of New Milford, Litchfield, CT, and moved to Kingsbury, Washington, NY. In 1798 he moved to Paris, Oneida, NY, which was renamed Marshall in 1799.

Joseph was originally buried on his farm in Marshall, Oneida, NY. He was later reinterred in Waterville Cemetery at the direction of his GG grandson, George Eastman, the founder of Eastman Kodak Company.
