She was a philanthropist and volunteer who established a program for people recovering from brain injuries. In 2001, she established the Evelyn and Simon Elias Clubhouse in Northeast Philadelphia. The Clubhouse, a community-based day program, promotes self-sufficient living for people disabled by brain injuries. She was the wife of Gustave Huber, and after his death, married Simon Elias. She worked in the financial offices of Acme Markets. She volunteered at Albert Einstein Hospital and at a Jewish center for young children which became the Lassin Early Learning Center. Preschoolers at the Center called her "the cookie lady" because she brought them treats. The children gave her a birthday party every year, including the year she turned 91. She died of bone cancer.
