Paul Eickstadt, a 51-year-old from Mounds View, Minnesota worked for the Sara Lee Bakery Company. Paul was born and raised in St. Paul,Minnesota.
He was the driver of a tractor-trailer rig that was engulfed in flames immediately after the collapse. He was trapped in his vehicle dangling between broken concrete slabs. He died of multiple blunt-force injuries, according to the Hennepin County medical examiner's office.
Paul had just begun work that afternoon, delivering fresh bread products from Roseville, Minnesota to the Sara Lee bakery depot in Mason City, Iowa.
Paul loved the outdoors, enjoying trips to Alaska and simple camping trips up north.
Paul was preceded in death by his parents, Bob and Lois Eickstadt. Paul is survived by his brother, Hal (Bonnie) Eickstadt; and sisters, Sue (Bob) Espeseth and Lori (Jim) Stanoch. Paul will also be sorely missed by his nephews and nieces, Bob, Kristen (Dustin), Melissa, Ashley, Daniel, Katie, Joshua, Hannah, Tommy; and his great-nephew, Bobby.
Cause of death was blunt-force injuries.
