Son of Felix August Heink (1813-1881) and Johanna Rebecca Auguste Durstoff (1827-1887).

Married Ernestine Rössler on 11 January 1883 in Dresden. (Most biographical summaries say the marriage took place in 1882, but as the documentation shows, it actually occurred on 11 January 1883, about six weeks prior to the birth of their first son, August, on 20 February.) Ernst apparently deserted his family and the couple divorced in February 1893.

In his early life, he attended the Military Cadet Corps school and became a military officer, and later the secretary of the Semperoper (the Dresden State Opera) at the Royal Theatre. After his 1893 divorce, he married a second time, to Eugenie Müller, who was born 14 August 1859. She was the daughter of an unnamed Müller from Zwickau who was a lawyer. He had two children with his second wife.

Mme. Ernestine (Rössler) Heink next married Paul Schumann (the professional name of Curt Paul Fünfstück) and then William Rapp.

Little has been discovered about the later life of Ernst Heink, but it was reported that after their acrimonious divorce Ernestine destroyed all photos she had of Ernst.
