Elizabeth (Lizzie) Rutz was born near Little Rock, Pulaski, AR. She was the daughter of Solomon & Florence Littlejohn Rutz. When she was very small her father bought a small cup for her that was inscribed "Forget Me Not". She was 5 years old when he died. She kept the cup the rest of her life. She married Richard McDonald Easley in Celeste, TX on 27 June 1909. They met while both were working in the cotton field for Mr. Lewis. They farmed in Bailey and Celeste. They were the parents of six children. She was active in the Augie Home Demonstration Club of Fannin County TX. She served as Vice President in 1930. On 15 Jan, 1930 the Club donated $5 to her in love and sympathy when their barn burned.

She was a member of the First Methodist Church in Celeste, Hunt, TX. She lost two children, Elizabeth in 1928 at the age of 4. She ran in front of the mail man's Model T. When Lizzie died the coat, doll and toys of Elizabeth were found in her closet. Her son Earnest died in 1946 of cancer. She enjoyed sewing and quilting. Richard & Lizzie lived near the railroad tracks in Celeste, Hunt, TX. She fed the homeless men who stopped at her house while riding the trains. She was a very kind and loving Christian woman and a wonderful grandmother.
Elizabeth's Tea Cake recipe
1 cup sugar
1 cup butter
2 eggs unbeaten
3 table spoons heavy cream
2 table spoons baking powder
1 tea spoon nutmeg
1/2 tea spoon salt.
Put all in mixing bow and mix. Sift flour, use enough to make a stiff dough then put on board. Roll out thickness you desire. This recipe is over 100 years old. (flour 3 1/2-4 cups)
