Gilbert married to Mary Eleanor Adamson on 11 June 1896 at Germantown, Philadelphia, Pennsylvania. She was the daughter of William Adamson and Eleanor Prescott Adamson. Gilbert and Mary had no children. He next married to Eva Mathewson on 21 October 1908 at Parsons, Kansas. They had three children; Angel Mathewson Palen, Gilbert Mathewson Palen, and John Gould Palen. Gilbert was educated at Germantown academy, Haverford College, and Hahnemann Medical College at Philadelphia, Pennsylvania. He was professor of otology at Hahnemann Hospital, otologist at Hahnemann Hospital, and he was chief of eye, ear, nose, and throat department of Broad Street Hospital at Philadelphia, Pennsylvania. Gilbert was past president of the Philadelphia Rotary club and past district governor, Rotary International. He was active in Boy Scouts of America, and a member of the Union League and a Masonic lodge in Philadelphia, Pennsylvania. He was an honorary member of the Roxbury Rotary club in Roxbury, New York. He was superintendent of the Margaretville hospital for several years in Margaretville, New York.
