Seventh of the nine children of Michel Schaaf (1776-1853) and Madeleine Acker (1795-1851) of Mememlshoffen, Bas-Rhin, Alsace, France, Jean was born in Memmelshoffen on 23 June 1830. He emigrated to the United States and on 13 Oct. 1851 he declared his intention to naturalize and his petition was granted 7 July 1855 in Philadelphia, PA. On 16 August 1853 at St. Peter the Apostle Church in Philadelphia, he married Anastasia Mueller, an emigrant from Forchheim, Freiberg, Baden, Germany. The couple raised four children: Anastasia Schaaf (Herman C.) Barthmaier (1855-1932), George W. Schaaf (1856-1926) who married Sophia Dorsan (1860-1932), Mary M. Schaaf (William H.) Lindig (1862-1928), and Joseph Ferdinand Schaaf (1873-1930) who married Martha Blackman (1873-1946).

Jean Schaaf was a cordwainer, a shoemaker who makes fine, soft leather shoes and other luxury footwear; the term comes from "cordovan," the fine leather from Córdoba, Spain. He pursued this occupation even into advanced old age. The 1900 census lists him as still practicing this work at age 70. In 1910, he and his wife Annie are living with the family of their daughter Mary Lindig and John is listed as having his "own income" at age 80. Annie died in 1914 and in 1920, John lived with his son Joseph Ferdinand, Joseph's wife Martha Blackman, and Martha's 88 year old mother Sarah. At age 90, John is listed as having "no occupation." He died the following year, on April 21, at almost 92 years old.
