Catherine Olsen Knight was born in Lockport, LA on February 5, 1918 and was a resident of Carlyss, LA until her marriage to Carroll Knight on April 10, 1935. She resided in DeQuincy, LA until the time of her death.
She owned and operated Knight's Beauty Parlor in DeQuincy until her retirement in 1988. She was a devout member of First Baptist Church and was a Sunday School teacher in the youth department until she became ill. She loved working in her yard and growing any kind of flower or plant and sharing them with others. She loved to cook and host family gatherings. Catherine passed away at age 90 on July 12, 2008 in a Sulphur, LA hospital after a long battle with Alzheimer's Disease. A wonderful mother, grandmother, and wife who loved her family friends, and her church, Catherine will be remembered with love and respect.
She was preceded in death by her parents: Charles and Vicelo Areno Olsen; sisters: Margaret Carte, Stella "Nookie" Baker, Mary "Snokum" Ellender, Sophia Mount; brothers: Andrew "Luly" Olsen, Spiro Olsen, Archie Olsen; son-in-law Jerry Gilbert, and grand-daughter-in-law Nikki Gilbert.
Survivors include her husband of 73 years, Carroll Jackson Knight of DeQuincy; son Robert G. Knight (Ann) of DeRidder; daughter Carolyn Gilbert of DeQuincy; grandchildren: Donna Hudson (Charles) of DeRidder, Robert "Bubba" Knight of DeRidder, Cathy Boyer (Blake) of DeQuincy, Jud Gilbert of DeQuincy; great-grandsons: Jared Walker, Justin Walker (Joanne), Tyrell Boyer, Ethan Boyer, Colton Boyer, Gage Boyer, Ryder Boyer, Tyler Boyer, Dalton Gilbert; two great-great-grandchildren; sister Barbara "Tootsie" Baker, and brother Charles "Buster" Olsen (Gertie) of Carlyss.
Her funeral was held at the First Baptist Church of DeQuincy with Rev. Rob Walls officiating. Burial was in Rigmaiden Cemetery under the direction of Hixson-Snider Funeral Home.
