Hubert was born on March 20, 1928, in Oklahoma City to C.P. "Pete" and Elgiva (Hestand) Plumlee. He was raised in Tuttle and graduated from Tuttle High School with the graduating class of 1947 before enrolling at Oklahoma State University. On February 4, 1949, he married the love of his life, Mary Alice Phillips. They would go on to raise four children during their nearly seven decades together.

Hubert spent several years working as a truck driver for Halliburton and in 1958 he followed the Lord's calling into full-time ministry at the Church of Christ in Wayne, OK. He would go on to minister churches in Pauls Valley, OK, Denison, TX, Galena Park, TX, Baytown, TX, Duncan, OK, (where he also owned Duncan Furniture Refinishing), New Orleans, LA, Shawnee, OK, and most recently, Grand Blvd Church of Christ in Oklahoma City, OK, where he served for nearly a decade before retiring in 1999. Hubert also owned Berryhill Ice Cream in Edmond for several years in the mid 1980's.

Following his retirement, Mr. Plumlee enjoyed playing golf with his brothers and traveling to the Holy Land and Alaska with his loving wife. Hubert was a kind and outgoing man with a true servant's heart. He enjoyed telling jokes and using his keen sense of humor to bring light to dark in difficult situations. Family and faith were the cornerstones of his life and he faithfully served the Lord his entire life and raised his family to love and serve the Lord as well. Hubert was never happier than when he was surrounded by his kids and grandkids and he will truly be missed by all who knew him.

Hubert Plumlee was preceded in death by his parents, three brothers: Louis, Vernon, and Wayne Plumlee, son Jerry Plumlee, and great-grandson Jonathan Maldonado.

He is survived by his wife, Mary Alice Plumlee; three children: Steve Plumlee and wife Jan, Brian Plumlee and wife Karen, and Cathie Totty and husband Gordon. He is also survived by 8 grandchildren: Leann Wiggins, Chrystal Rhude, Keitha Plumlee, Kevin Plumlee, Malia Coleman, Eric Plumlee, Rachel Norris, and Mackenzie Totty; 8 great grandchildren; two brothers: Paul and Joe Plumlee, as well as a sister, Helen Wood, and numerous nieces, nephews, and other beloved family members.
