Mary Elizabeth Frances Hughes was born on 21 May 1885 to Manson Taylor Hughes and Catherine Weed Hughes. The exact location of her birth is unknown at this time, but assumed in Clay or Coosa Counties in Alabama.

She married William Lee J. Coley Saffold, however, the documentation of marriage is unknown at this time, but also assumed about 1906, since their first child was born July 1907. Elizabeth and her youngest sister, Anna, married Saffold brothers, William and John.

Elizabeth and William proceeded to have five known children: Winston J. Saffold, Clinton Saffold, Alvin William Saffold, Mary Evie Lee Saffold, and Ervin Saffold. There is documentation of four of the five children, except for Ervin. Only through stories told by Evie Saffold Gentry, does the memory of Ervin live. Since death records were not recorded in the State of Alabama until 1908, it is assumed that Ervin was born prior to that year and also passed away.

Elizabeth and her family lived in Marble Valley and Shady Glenn before finally settling in Anniston, Alabama. The exact year of moving to Anniston is unknown, since the Saffold family is only shown in the 1920 & 1940 U.S. Censuses. Moving to Anniston, Elizabeth and William mostly resided on Furnace Hill in West Anniston.

On 23 May 1950, Elizabeth passed away from heart problems at the age of 65. Elizabeth left behind a husband, two children, and a large number of children. She was laid to rest at Pine Grove Cemetery in Anniston, Alabama.

The grave of Elizabeth is not marked with a formal headstone, but a rock in the approximate location of her grave. Few descendants are aware of this location.
